Why was I excited when I saw this on Money Saving Mom? I recently tried a recipe from my older sister that uses rice vinegar. It is one of the best crock pot dishes I have tried in a long time. It also makes a lot of food. I took half of it to a friend who just had a baby and still had plenty to feed my family.

Thai Style Pork Stew
2 lbs boneless pork loin (cut into 4 pieces, trimmed)
2 c. chopped red bell peppers
1/4 c. teriyaki sauce
2 Tbsp. Rice Vinegar
1 tsp. crushed red pepper
1/4 c. creamy peanut butter

6 c. uncooked basmati rice
1/2 c. chopped green oinons
chopped peanuts
lime wedges (if wanted)

Place pork, bell peppers and next 4 ingredients in crock pot. Cook on high for 1 hour, then low for 6 hours
Remove pork and coarsely chop or pull apart with fork.
Add peanut butter to cooking liquid, stir well, add pork and stir.
Serve over rice, top with green onions, peanuts and limes if desired.
