I Baked Kale-It is Suprisingly Good!
I am always looking for ways to make your diet a little healthier. So while I was taking care of two sick kids yesterday I decided to try something new. I saw a recipe for Crispy Kale in a Woman’s Day magazine and considered it. When talking to my sister recently she mentioned it too so today I tried it.
Much to my surprise it was really good. Even my two kids ate it! I was shocked. They called them green chips and actually at some! Here is the recipe if you want to try:
- Toss 4 cups torn kale leaves (stems removed) with 1 teaspoon olive oil and 1/4 kosher salt. (I used sea salt)
- Spread in an even layer on a large wire rack on top of a baking pan.
- Bake at 350 for 15 minutes or until just crispy.

309% of the recommended daily allowance of vitamin A, 201% vitamin C, 14% calcium, 10% iron, 3 grams of protein, 2 grams of fiber, and it only has 112 calories and 1 gram of saturated fat per serving!
