Fresh Strawberries from the Fruit and Berry Patch and Loads of Waffles

fruit_berry_patchWhat better way to start off the Memorial Day weekend than with FRESH STRAWBERRIES!  We loaded up the van and headed to the Fruit and Berry Patch in North East Knoxville on Saturday morning.

The Fruit and Berry Patch is located at 4407 McCloud Rd. Knoxville, TN 37938, just a few minutes “outside town.”

The goal of the day was not only to get the boys outside for some much needed sunshine, but also to gather enough fresh strawberries for an afternoon of waffle-making.  Although we had been enjoying our discount Kashi Waffles (coupon here), we opted for some of THE HUSBAND’s handi-work at waffle making.

For this round of waffle-making we made a double batch of regular waffles using baking mix with sliced strawberries, a double batch of whole wheat waffles with strawberry puree (instead of the applesauce as listed in the recipe above), and a single batch of regular waffles (using baking mix) with blueberries.

We netted 22 total waffles, a completely messy kitchen, and plenty of strawberries left over to snack on for days to come.  I even used some strawberries for shortcake for dessert that evening.

    Homemade Strawberry Muffins
    1/2 cup of sugar
    1/4 of oil
    1 egg
    1 cup of milk
    2 to 2 1/2 cups of self rising flour
    3/4 cup of smashed fruit

    Mix together the sugar and oil. Add egg then add milk, mix well. Add flour and mix til smooth. Add fruit. Pour into a muffin pans and bake at 350 degrees for 20-25 minutes. Easy cheap and yummy!
